Green Tea

Green tea comes from the camellia sinensis plant, just like black tea. However green tea doesn't go through the process of oxidisation (which turns the leaves from green to brown). After the leaves are harvested they are fixed – either steamed or in a hot pan – which seals the leaf and prevents any oxidation taking place.
